Taj City Centre New Town, Kolkata, is set to transport the city’s food lovers to the heart of Rajasthan with its upcoming festival, “Flavours of Rajasthan.”

This exclusive culinary showcase will be hosted at Shamiana, the signature all-day dining restaurant, from April 21 to 26, 2026.

The festival celebrates the diverse and vibrant palate of one of India’s largest state—spanning from the royal kitchens of Jaipur and Udaipur to the robust, spice-forward fare of Jodhpur and the Marwar heartlands. Rajasthani cuisine, characterized by its resourcefulness and opulence, relies on bold spices, preserved ingredients, and time-honoured techniques designed for an arid landscape.

Curated by Chef Manwar Kandari from the prestigious The Lalit Bagh, Udaipur, the menu features a selection of signature dishes prepared using traditional methods such as slow roasting over open flames and clay-pot cooking.

The festival also pays homage to the deep cultural ties between Rajasthan and Bengal. Since the 18th century, the Marwari community has been an integral part of Kolkata’s socio-economic fabric, weaving their rich culinary traditions into the city’s diverse dining landscape.

Commenting on the occasion, Nitin Hudda, Hotel Manager, Taj City Centre Newtown, Kolkata said, “We are delighted to present the rich and diverse Flavours of Rajasthan in Kolkata. This festival brings together iconic dishes from across the state, offering our guests an opportunity to experience its vibrant culinary heritage and royal traditions first-hand."

Guests can savour a thoughtfully curated menu featuring signature Rajasthani Vegetarian and Non-Vegetarian delicacies like Jodhpuri Paneer Tikka, Sangri Ki Tikki, Dungri Murgh Tikka, Jinga Jaisamandi, Karare Aloo Tikki, Paneer Ke Sule, Gatte Ki Subzi, Mahi Jaisamand Ki, Laal Maas among other traditional dishes.

Every dish served is a heartfelt and sublime ode to its specific region, capturing the soul of Rajasthan’s diverse landscapes. Complementing the inimitable menu of “Flavours of Rajasthan” are its desserts. The Mini Ghewar with Rabdi, Mishri Mawa, Moong Dal Ka Halwa are worth a mention.
